FRESH SALMON & NOODLE SALAD

FRESH SALMON & NOODLE SALAD - Lisa Trujillo Active Wear

Ingredients

  • 2 skinless salmon fillets
  • 1 large orange the juice and zest of half, the rest peeled and chopped
  • 125g beans cut in half
  • 75g frozen peas
  • 125g konjac noodles
  • 2 tsp red curry paste
  • 1 tsp soy sauce
  • 3 shallots finely chopped
  • half a pack basil chopped

Method

  1. Pan fry salmon, scatter with orange zest. Add beans and cook for 5 minutes
  2. Take out and let cool, pan fry the beans and add konjac noodles. Top with curry paste, soy sauce and orange juice and shallots. Allow to simmer.
  3. Drain ingredients and add all ingredients (except salmon) to a salad bowl, toss through then add salmon on top. Season if you wish. Enjoy
