INGREDIENTS
2 TBL Mavers Chunky Peanut Butter
1 Garlic clove chopped
1 TSP of curry powder reduced salt
1 TSP of soy sauce
2 TSP of Lime Juice
2 Skinless chicken breast fillets cut into thick strips
Method
- Heat oven to 200C/ 180C and line a baking tray with non-stick paper.
- Mix 2 tbsp chunky mavers peanut butter with 1 finely grated garlic clove, 1 tsp curry powder, tsp of soy sauce and 2 tsp lime juice in a bowl. If the nut butter is too hard add small amount of boiling water to adjust consistency
- Add 2 skinless chicken breast fillets, cut into strips, coat in mixture. Arrange on the baking paper, spaced apart, and bake in the oven for 8-10 mins until cooked, but still juicy.
- Place skewer through the middle
- Eat warm and serve with sweet chilli sauce if you wish
